More Casserole

This is a super easy dinner, my guys all love it.  Good served with hot buttered bread.

8 ounces or 2 cups dry pasta (your choice of shells, elbows, any kind.  I like colored rotini)
1 pound hamburger or other ground meat
1 small onion, chopped or diced
1 can condensed cream of mushroom soup (about 10 ounce)
1 can creamed corn
1 can diced tomatoes & peppers (not drained, about 1 to 1 1/2 cup)
1 1/2 cup frozen peas (about 1/2 bag)
salt & pepper
1/2 to 1 cup grated cheese for topping

I use a dutch oven type pot and cook everything in that one pan. 

Cook pasta according to package directions (don't overcook it).  Drain & set aside.
Preheat oven to 350 degrees.
Brown hamburger, break up fine. Salt & pepper to taste, I use about 1 tsp salt and 1/4 pepper.
Now remove pot from heat, add the cooked pasta and all the remaining ingredients except the cheese.
Stir gently to combine, then smooth the top with the back of your spoon .
Bake covered for 20 minutes. 
Top the casserole with the grated cheese and bake uncovered for 10 minutes to melt cheese.
This is a good time to heat the buttered bread in the oven too.


To save 10 or 15 minutes, you can cook the pasta & hamburger at the same time in separate pans, then combine everything in a casserole dish.  You can spend that extra 10 or 15 minutes washing the extra dishes! ;D

This is an easy recipe to adjust for taste.  I like my onions with a little crunch, but if you don't, you can cook them with the hamburger.  I use the canned diced tomatoes & peppers, but you could chop your own fresh or canned, and add more or less peppers as you like.  If you don't like 'cream of mushroom' you can substitute some creamed soup or sauce you do like.
