Butter Rum Oatmeal Cookies

Butter-flavor nonstick cooking spray:
1/2 cup packed brown sugar*
6 tablespoons lower-fat stick margarine
1 tsp ground cinnamon
1/4 tsp baking soda
1 Tbsp light-color corn syrup
1 tsp vanilla
1 tsp butter flavoring
1/4 tsp rum flavoring
1 cup all-purpose flour
3/4 cup rolled oats
1/4 cup raisins.

Preheat oven to 375 F. Coat 2 cookie sheets with nonstick cooking spray.  Set aside.  In a medium bowl, combine brown sugar, margarine, cinnamon and baking soda.  Beat with an electric mixer on medium speed until mixture is combined.  Stir in corn syrup, vanilla, butter flavoring and rum flavoring.

Using a wooden spoon, stir flour into margarine mixture.  Stir in oats  and raisins.  Drop dough by rounded teaspoons 2 inches apart on prepared cookie sheets. 

Bake for 8-10 minutes or until light brown around edges.  Transfer cookies to wire racks:  cool.  Makes 24 cookies.

*TEST KITCHEN TIP:  Don't recommend sugar substitutes for this recipe.

I take a publication (magazine) called Diabetic Living, and it has recipes, tips, articles, etc. in it.  I'm always on the lookout for something new to fix.  These cookies are pretty good.  Not like "real" cookies.  I have found that some of the diabetic cookies need to be flattened some before putting into the oven, as they don't seem to spread like "regular" cookie dough. 

I'm also making a crockpot roast I got from this publication.  We'll see how it turns out.

Kjell is addicted to cookies..
I probably make cookies at least once and sometimes 2 times a week.
I will try these without the raisins. He doesn't like raisins in anything. ( says that they looked like flys when he was a kid, and he can't get past it) **he is sooooo weird**

I'll let you know ..or I will make him let you know ..what he thinks they taste like.
