Eggs in a Haystack

6 eggs
5 large potatoes, grated ( salt & peppered)
1/2# bacon fried crisp and crumbled
1/2 diced onion (optional)
1/4 cup bacon grease
1/4 stick butter

In a 16 inch cast iron dutch oven: ( or you can use any deep pan)
Fry bacon until crisp. Set aside .
Brown onions in bacon grease and butter, add potatoes, fry and stir often until done to your liking.
(I like my potatoes crisp)
Take crumbled bacon and stir into the potatoes.

With a dipper, push down on potatoes ( kind of skooch them around)  to make 6 nest holes.
Crack an egg into each hole.
Sprinkle salt & pepper and place lid on pan.

Continue to cook  for about 3 minutes, for an "over medium" yolk.
Cook longer for a more firm yolk.
Just check while cooking.

This is wonderful and not hard to make at all.
