Oatmeal pancakes

These can be made with leftover oatmeal or you can make them from fresh oatmeal. But they are wonderful and healthy too.                   

Ingredients
   ½ cup rolled oats (not instant)
   1 cup boiling water
   2 eggs
   ½ cup milk
   1 cup flour
    (opt) 4 tablespoons sugar
   (opt) ½ teaspoon cinnamon (pumpkin Pie spice is a nice change as well)
   1 ½ teaspoons baking soda
   Pinch of salt (~ 1/8 teaspoon)

Place oats in bowl and pour boiling water over them.  Allow oats to sit for 20+ minutes.   Sift all dry ingredients together.  In large bowl mix wet ingredients together, including cooled oats.   Add dry to wet and stir just to blend, do not over mix.

On a hot skillet, melt some butter, add ladles of batter, cook until bubbles appear on surface and begin to pop, flip and cook until brown on both sides.   Serve with fresh fruit, butter and syrup.

Makes about 15 pancakes of 3" diameter
