Salmon and "Sauce"

OH MY GOSH..
Rochelle made some awesome sauce for their salmon the other night.
It was dinner time and had just got back form Wichita so I stopped in for just a second to drop off some things and to give Mason a hug and kiss and she had this sauce made and already on the salmon. Ohhhhhhh to die for.
Derek is on a very very low ( about 5carbs a day)  carbohydrate diet, so she has this recipe book that she tries new things every night. * bless her heart.. she is such a good wife and mother**
anyway.. back to the food.

Here is the recipe. It is best used on slabs of salmon, but I imagine you could use any thick fish.

2# salmon filets
4 tblsp lemon juice ( divided)
1/2 cup grated Parmesan cheese
4 tblsp real butter, melted
3 tblsp real mayo
3 tblsp green onion ,plus some tops
1 teasp mustard
1/4 tsp salt
dash of tobasco (optional)

Rinse and pat dry the fish
Place in a very well buttered pan

Brush with 2 tblsp lemon juice
Bake 30- 40 minutes at 350 degrees

Combine remaining ingredients and pour on fish.
Broil for 2-3 minutes.


Try it.. You will not be sorry you did.

Thanks, that sounds great!  I, too, watch carbs and sugars, however don't have to be that careful as Frank is type II, at don't like to overdo it.  I am so greatful for the products on the market these days.  Sure makes life easier, but we still have to be careful.  I read alot of publications, as I'm sure she does as well.  Give her a hug for taking this seriously, as many people just tend to "blow it off".

Here is a recipe I use quite often for slabs of fish that I pan fry.  I have not used it on fresh water fish - only salt water fish.

  You can increase the recipe as many times as you need for the amount of fish you are fixing.
This recipe calls for 4 (4 oz) fish fillets -- and of course that is NEVER enough for us.

2 Tablespoon skim milk
1 Tablespoon low-sodium soy sauce
1/4 teaspoon garlic powder
1 egg white - lightly beaten

Mix these ingredients in a large, shallow dish stir well. 

Add the fish fillets, turning to coat.  Marinate in refrigerator 15 minutes, turning fish once.
  Remove fish from marinade, and discard the leftover marinade.

Combine 1/3 cup fine, dry bread crumbs
1/4 cup grated Parmesan cheese
   Combine in a large ziptop plastic bag.  Add fish fillets and seal the bag and shake to coat.

  Remove the fish and place in heavy skillet that has either butter flavored crisco or melted butter.
Fry until flaky and crisp on the outside.
