Sausage making helo needed.

I am interested in making sausage. Are there any sausage makers out there that can help me along? I have looked at a lot of websites, but always find it is good to have my Kansas family there for help on these things our ancestors took for granted. I would like to make pepperoni, old fashioned sausage in casings, polish sausage etc. I can buy casings at a local grocery store but some of the curing agents I are harder to find. Any suggestions, recipes etc would be helpful.

I don't have any recipes but I do have a little advice from experience.  We bought our seasoning from a meat processing place, they sold it by the pound with directions.

One of the best things we learned to do was to chill the meat, cut it into chunks about two inches.  Spread out on table and put seasoning on it, mix to coat.  Put in refrigerator or we used ice chests, cover meat with clean plastic and then put bags of ice on top.  Leave it set about two hours and then grind, the seasoning will be well mixed with the meat and much easier than trying to mix seasoning into the meat after it is ground.
