Diane, that sounds like the recipe that Helen Hinkle made  -- and it is good !! 
Now, Joanna, remember that will serve 12 -- so you might consider giving a few of us a call to see if we are available to drop in and share it with you.   hahahahahahaha
  I plan to use some of my squash that way... soon!

Diane,  that squash recipe is wonderful!  I made a half batch, but forgot to half the stuffing, so it was a little crispy on top... but you kow what?  It still tasted great!

All of these recipes sound so good. But, I still love just sauted zucchini with a little onion
and I add about half a cup.....depending on just how generous my arm is...of parmazan ??? I know that is mispelled.
Shaker cheese like you put on spaghetti......

and I can eat a whole one of these. I also add a little cracker in my case it is
a Ritz to the top of the dish.

One large zucchini  would feed a couple of people......unless you are like me and eat the whole thing as a meal.
Just pass the tomato and or the peppers. Yum Yum :-* :-* :-*

Joanna, I'm glad you liked it.    Judy, your sounds good too. This time of year we often just have fresh veggies and call that the meal.

We like squash, tomatoes, onions and jalapenos stewed together. Ted can eat bowl after bowl of it. I also make it for several fellows here in town and it isn't uncommon to find a sack of squash on my porch. So I make a big batch and pass it around to the usual suspects.  :D :D
