Green Chili Soup

1 med. onion (chopped fine)
1 clove garlic (minced)
1 Tbs. margarine
4.5 oz. can chopped green chilies
1 1/2 cans Cream of Mushroom Soup
1 can Cream of Chicken soup
1 cup chicken broth
1 cup skim milk
1/2 lb. Velveeta cheese (cubed)
1 1/2 cup cubed chicken

Saute onion and garlic.  Combine soups, chilies, broth, milk , onion, garlic and chicken.  Simmer over low heat for 1 hr. Stirring once in awhile. Add Velveeta and heat long enough to melt cheese.

This is one of our favorite soups.  It's so easy to make, doesn't make a great lot, is creamy and smooth.  It is good with crackers, or better yet Jalapeno Cornbread.

I usually use 2 chicken breasts and 2% milk, sodium can also be cut by using Healthy Request Soups.  I also use low-fat Velveeta.
