Peanut Brittle

Here's the recipe I used today, that really did turn out well!

PEANUT BRITTLE
2 cups sugar       
1 cup light corn syrup
1/2 cup water
1/4 cup butter
2 1/2 cups raw peanuts
1 tsp. vanilla
1 1/2 tsp. baking soda

Combine sugar, corn syrup, water and the butter.  Cook over medium heat, stirring with wooden spoon to dissolve the sugar.  Cook mixture until the soft-crack stage.  Stir in the peanuts and continue cooking until it reaches the hard-crack stage.  (Actually, I didn't let mine get to that stage, when it was the right golden color, I removed from heat.  It was between the soft-crack & hard-crack stage.)  Remove from heat.  Quickly sprinkle baking soda over mixture and stir constantly, iand mmediately pour onto two cookie sheets, which have been buttered.  Break into pieces, once it's cooled. 

I will say that the first batch I made, I used a recipe for making it in the microwave,  and I ended up getting it a "bit" too brown.  It's good, though! 

Jo, if your recipe would've been posted, I would've used it!  It looks good.
