Hoe Cakes. They were cooked over an open fire on the end of a hoe. and the pioneers ate them with a good portion of their meals.
These are awesome with ham and beans. They don't take as long to make as cornbread and are just as good.
I make them when we are in a hurry and don't want to have to wait for cornbread to cook in the oven
The ones I make are about like a tough pancake, not hard but not quite as soft as a pancake. just pick em up and tear em in two and sop it in the bean juice a little.
(Makes about 12 cakes)
I use a little self rising flour with corn meal, to make it about the thickness of pancake batter, can't remember exact proportions.... but I'll try to give you the "kinda's " on it.:
2 cups fine stone-ground cornmeal
2 teaspoons baking powder, preferably single-acting
1 teaspoon salt
2 large eggs, lightly beaten
2 cups whole milk or buttermilk
Use a bit of oil, melted butter, or lard, for the griddle.
Cook like you would pancakes..
Half this recipe makes about 5 nice sized cakes. :)
I like corn cakes made with the little mixes; the ones that used to sell for 4/$1.00. I think the name is JIffy, anyway mix just like the corn muffins, only fry them on a griddle like pancakes and serve with butter and syrup etc. MMMnnnn! Easy to take camping, and sure to be all gone at the end of the meal.
