Title: Freezer Pickles
Post by: genealogynut on August 17, 2006, 12:20:58 PM
Anyone have cucumbers running out their ears and don't know what to do with them?  Try making Freezer Pickles!!!  This is an easy recipe and they are delicious!!!

7 cups unpeeled, sliced cucumbers
1 medium onion, sliced
2 tablespoons canning salt
2 cups white sugar
1 cup cider vinegar
1 teaspoon celery seed

Cover cucumber, onion and salt with water.  Allow to stand overnight in cool place.  Drain well and pack in freezer containers, allowing 1 inch at top.

Mix sugar, vinegar, and celery seed thoroughly, but do not cook.   Pour mixture over cucumbers, cover and freeze.  They will be ready to use in a couple of weeks and will keep all winter.

Are they crispy?
I have tried to make pickles 2 times in the past 30 years.. and I swear , they were the worst things you ever tried to eat. Not bad if you wanted to use a knife to cut them with.. You could about bend them in half and they wouldn't even break! >:(
Horrible.. just horrible. And I swore I would never waste my time on pickles again.
I canned everything else..and it was delicious.. oh yeah.. except watermelon rind.
That was awful too.  :P

So if they are crisp and stay that way after thawing.., I will try them..
