The Strawberries are at their best right now, out in this corner of the world. I bought four quarts yesterday, for 77¢ a quart, not a bad price. Here's the recipe I used today, we're having this delicious dessert for family lunch tomorrow.
FRESH STRAWBERRY PIE
NGREDIENTS:
a.. 2 cups granulated sugar (I used Splenda, it worked great)
b.. 6 tablespoons cornstarch
c.. 1 large package Strawberry Jell-o
d.. 2 cups water
e.. 4 quarts strawberries, hulled (Of course!)
f.. 3 prepared graham cracker pie crusts
PREPARATION:
Cook sugar, cornstarch, Jell-O and water until thick; cool. Place whole berries in the pie crusts. Pour sauce over berries and refrigerate until thoroughly chilled.
Serve with whipped topping.
ENJOY!
ohh Bonnie --- do you suppose Fed Ex would overnight me a bushel basket full of 77c a quart strawberries?
They are nearly 2 dollars a quart here. That fresh berry pie sounds DE-LISH wish I had a HUGE PIECE right now.
One of Fred's favorite pies is a 2 crust strawberry/rubarb. And a pitcher of pure cream to pour over each piece in his dessert bowl.

Bonnie, we have been eating lots of berries, but they certainly aren't 77 cents here! I am glad to know that you used Splenda, I'll be giving it a try as we have several things coming up that I will need to take something and I always try to take several things that Frank can eat.

We need to get back to "Henry's" and buy more of the strawberries, while they are that price. I like to freeze them, and use them in a whole lot of things. Lots of times our strawberries are "pithy," but these are really good!
Bonnie, you have made my day. ;D I lived in Long Beach for a couple years when I was a teenager and thought I had died and gone to heaven when I ate a piece of strawberry pie for the first time. I have, since I got older, looked for a recipe for THAT strawberry pie, even questioning my mother (who took me to have this pie at a restaurant) while she was still living. She informed me she never ate a piece of strawberry pie that wasn't in a regular crust and you don't use jello in strawberry pie. I just knew I wasn't crazy and NOW I KNOW. Enjoy a piece for me, would you? and believe me, when the berries are ripe here I am going to use that recipe. Tell me, folks, when do the strawberries (not hot house) get ripe around here? Think I"ll have to wait till June, won't I? It will be well worth the wait, tho.

Bonnie, do you think the strawberry pie might freeze? Since there is only the two of us, if I were to make it, i might decide to freeze a couple of them. I really like to have things made ahead in case I have people "drop in". Of course, since we do have several things coming up that involves several people then it wouldn't be a problem. Just wondered what your opinion of freezing might be. Strawberries are frozen all of the time and I freeaze the Millionaire Pie and it's in a graham cracker crust.

Myrna, I have one of the pies in the freezer now, that I made over the week-end. I'm planning to have it for lunch this Sunday. I'll let you know how it turns out! (Another few days of suspense!)
Bob went to "Henry's" and bought 6 more boxes of the strawberries for 77¢. I "hulled" and cleaned them and have them in the freezer, in quart containers. These are coming from the "Strawberry Fields" in Carlsbad. There has been a lot of pressure from developers to "do away with" the Strawberry, and Flower Fields in that area, to make room for yet more million dollar homes, or whatever! I hope that never happens.
I make lots of pies and freeze them..BEFORE I bake them.. then all I have to do is pop them in the oven and you have a fresh baked pie.
I have done that too, with regular pie crusts. We used to do that in the restaurants all of the time, but these have graham cracker crusts.!

We had it for dessert for lunch today. It wasn as good as fresh! But, good!
My niece is visiting her USD student daughter in San Diego this week-end, and she called and said she was coming to visit with us this evening and bringing a......."Fresh Strawberry Pie!" So, how lucky can I get?

Bonnie, I made your pie! It is good. the only problem I had was I had to get the very large berries--(probably raised in a greenhouse). How I wish I could get over to Stillwell to get berries. They are known all over Oklahoma for their strawberries. Unfortunately, my time schedule will not allow it. We will go to East Texas this weekend to see our son graduate from college, and hopefully will get there in time to see a grandson play baseball; and next weekend we will go to Houston to see grandson and granddaughter play t-ball and baseball. Then, the next weekend is Memorial weekend and we all know what a hustle-bustle time of year that its!
Back to the pie, I have one left in the freezer and also a Millionaire pie, just in case someone drops by! I took Mother 1/2 of a strawberry pie yesterday. Since I couldn't be with her on Mother's Day, I drove up, took some lunch and spent the day just visiting. She really enjoyed it. She will be 90 next month!
