Title: Sweet Potatoes
Post by: Delbert on October 06, 2010, 07:29:01 PM
How to you care for the sweet potatoes after you dig them?   Keep them warm?

Do not let them get cold.  And I emphasize the DO NOT.  I don't know what the cold does to them, but they will turn black when you cook them if they get too cold.

I think you are supposed to let them cure in a dry shady place, then store them at room temperature.  I don't really know since I have never raised more than what we could use up immediately.

I keep them in the cool basement, I have already dug 75 pounds so I hope they keep.

This is the first year I have ever grown sweet potatoes; and boy, was I surprised at how many came out of a hill!  I got a 5 gallon bucket full out of one hill.  It was sure fune to watch them grow.  I'm keeping them in our storm shelter in the house.  Not much room for people.......hope the storms are over!

We had a sweet potato with dinner last night.  Yummy!!!  My wife's cousin is visiting from Chicago and swears that it wasn't a sweet potato, but then admitted she really didn't know what one looked like and mistakenly called it a yam.

I don't think anybody in this country grows real yams do they? Some people call certain kids of sweets yams but they aren't the same at all. We get several kinds here including huge ones with dark orange flesh that are really sweet. Yummy!

I like my sweet potatoes baked.  Then served with lots of butter or gravy.

I have to tell you this about my kids.  They didn't like sweet potatoes, wouldn't eat them.  So I told them they were going to eat them anyway.  That night at supper we had pie and they loved it.  Couldn't tell the difference from pumpkin pie.

I really don't know.  I think she will eat them, but not her favorite food.  Oldest daughter definitely likes them as she cooks them for me once in awhile.

I like to microwave a big fat one, open it up put in lots of butter, a drizzle of maple syrup and top with toasted pecans. That's dinner!

I like to grease the outside and put them on the grill along with some irish potatoes. I usually put them on right after the fire has died down and they cook while the coals are greying up for the meat. When it is time to cook the meat, I shove the potatoes to the back of the grill to finish cooking. I am ready for some outdoor cooking!  8) 8)

That sounds like a very tasty combination. I think I'd have to grill some fresh pineapple along with that too. Now I'm getting hungry!

I do like sweet potatoes and Jim loves them.  When I do buy them, I just wash them off, wrap them in a paper towel and put them in the microwave.  Excellent.

The best sweet potatoe casserole that I ever had was a recipe from Gin Smith.  She used half and half cream.  I lost that recipe, but it was wonderful.  I wish she was still alive, so I could call her up and ask her again how to do that sweet potatoe casserole.

Did it have a crumbly topping with pecans by any chance?

I can't remember.  I think it had the marshmellow topping, but I do remember it had half-and-half in it.  She pretty much coached me over the phone.

My favoritest food is fried chicken, fried chicken, and fried chicken.

I do love good pan fried chicken; a comodity seen very seldom these days. Nothing like a real chicken cooked with all the running gears separated from the back; the back and rib section in two pieces and the giblets cooked in their cavities. The wishbone in one section and the breast split in two for the fussy ones. For me--- the closer to the rear, the better the chicken.  :D And I do like sweet potatoes about any way they can be fixed; I used to love finding one in the fridge that I could peel out cold and smear with butter, just like eating candy. My mom used to tease me about that.

The very best food is made at home from scratch using stuff you have grown.

When I was a young teacher in my first apt. whole frying chickens were 25 cents a pound and Mom had already taught me how to cut up a chicken years before, so we had good fried chicken often. Sometimes I could get farm chickens from our neighbors from home at even less. Even store chickens here were local chickens then and not the factory raised chickens more common today.

There are some factory raised chickens that I just won't buy; Tysons is one of them. They smell funny and are way too fat. I do buy Sandersons chickens from Marvins market in Independence. The meat is firmer and not quite so fat.

Have you ever thought of taking a chicken back to the store wehn you have paid for a whole chicken and there is no giblets?  Some day I'm going to do that. :P

I'm afraid if I did that some wise guy would bring me out the stomach, lungs, and the whole egg laying business too! ;D I wonder what they would do if I demanded a rooster.
