Cobbler A'la Cherry

1 c. flour
1 c. sugar
1 t. baking powder
1/2 t. salt
2 T. melted fat
1/2 c. milk
1 No. 303 can cherries (sour pitted)
2/3 c. sugar


Sift together the first 4 ingredients, add melted fat and milk.  Mix until welll blended. Place the can of cherries (with juice) and sugar in saucepan, and bring to a boil.  Place the 1st mixture in a greased baking dish.  Pour the cherry mixture over it.  Bake 35 minutes at 400 degrees.  (The batter will rise to the top as it bakes).  If desired, serve with whipped cream or ice cream.

This recipe was an old standby when I was growing up.  We used home canned fruit, though.  I used to make it with blue plums.  I recently found out that it was handed down in the family from my paternal grandmother.  She died in 1929 and I don't know how long she had used it.

I will have to try that.. as I usually make my cobbler with the dough stuff on top.
Sometimes I make flour, butter and sugar and put it on top also.. I always wondered if the dough stuff would bubble up to the top if put on the bottom.

If you use this recipe, it certainly will.  That is the good part of it.  The excess juice soaks into the dough and is yummy.

This is one of my favorite recipes, as it's quick and easy.  Tis rather "tart" though.
