Peeling potatoes the easy way

On a side note about potatoes, we bake ours in the microwave when we are in a hurry and in the oven when not.  My wife eats the whole potato, skin and all.  I prefer to dig the innards out and leave the skin, vitamins or no vitamins.  Again, my favorite is to cube them after peeling and spraying them with a vegetable spray and baking them in the oven.  This takes about 20 or 30 minutes and makes it like a big french fry without frying.  These go well with the chicken thighs that are baking with them.

My stomach is growling.
