Heavenly Mashed Potato Casserole

Sorry I can't give amounts, but ingredient's will coincide with the amount of potato's you cook.
If anybody wants amounts.. let me know how many potato's you are using and I can tell pretty much tell you , but experiment with your tastes.  It is just real hard to screw this up.
This is one of my family's favorites.


*What cha' need*:

Potato's
Bacon
Chedder and American cheese
Sour Cream and Chive Dip
Philly Cheese
Real Butter
Real whipping cream
Green onions or onion powder
Garlic or powder
Salt & Pepper


Peel  and chunk up potato's and boil til tender..
While they are boiling, fry up quite a bit of bacon.. make it crisp. Crumble and set aside.
Also, take chedder cheese and shred up ...I use a lot.
Chop up fine, a couple of green onions using a bit of the green stem too.
( too much onion can over power this..so use sparingly)

Drain and mash your potato's using butter and whipping cream, & Philly cheese and a bit of garlic, salt and pepper.  If you are using onion "powder" add it now.. 
( I use a hand mixer on high)
Potato mixture should be medium firm, not stiff and not soupy.

When all is mashed and mixed and melted........
Stir in the green onions, bacon and some of the shredded cheddar.
Fold in a little of the sour cream and chive dip.
(This is to taste..I don't like much.. my daughter in law likes a lot))

Butter your dish real good.
Put about half the pototo's in the dish and spread.
Sprinkle some of the bacon on this and add slices of American cheese to cover.
Put the rest of the potatos on the top of this and spread .
Sprinkle more bacon and  cover with the rest of the shredded cheddar cheese.

Cover with foil and bake at 350 for about 20 minutes. Take off foil and bake for 10 more minutes or until cheese is melted real good on top.

This can be made ( not baked) ahead of time and put in the freezer.. or made that morning and put in the fridge for the day  if you don't need it until evening.

It is a great dish to take places... and you will not ever bring any home, no matter how much you take.

I have added Picante, Jalapeno's, fresh corn..creamed and regular...the possibilities are endless
