Rocket Bread...

The Saturday after Thanksgiving last year, we had a second Thanksgiving Feast that we cooked out doors at a State Park. My future step-brother-in-law had a new campfire spit on which he cooked the turkey, we had 4 different dutch ovens cooking green beans, sweet potato casserole, bread and a cheesy potato dish. The great thing about cooking in the dutch ovens was that as each item got done, we could just leave it hot in the the dutch oven off the fire so when we were ready to eat everything was still piping hot.

I'm going to lobby to do this years Thursday dinner "al fresco" since it worked out so well.

My first batch of Rocket Bread it bubbling away as well.

Hi y'all... just finished up my first loaf of the rocket bread. Turned out pretty well.  Thanks for sharing this. I hope everyone else's turned out good too.

Ok gang.. look-it' this !!

I should have taken pictures as I was making it, but the end result is the best part anyway.
I let mine set and raise for about 60 hours..( I love a sourdough bite to my bread) I punched it down about 5 times.

This is the end result.

It is so easy and really fun to make.

I thought it would have a sourdough taste.. it doesn't at all.. but man oh man .. is it ever good.
It has a spongy almost toughish texture..and the outside is really crunchy.
I can tell right now that I will be buying a bigger size britches if I keep making this stuff. :)

Wow, Teresa....that bread looks delicious! I may have to be buying me a cast iron Dutch oven sooner than I had planned!

Hey y'all... I just made my second batch of this bread. This time, I went out to the herb garden and got basil, thyme and oregano, chopped it up and put it into the dough.  You just don't know what you are missing until you try this recipe.  So much for the weight I've lost recently.

I know.  I have got to make some more, but haven't been home long enough to do that.

The nice thing about this bread is that if you are gone and you aren't there long enough to start  to bake it.... just punch it down a few whacks and let it raise again.. lol
I let mine set and raise and punch  about 60 some hours..
it was yummy.
I am going to add cinnamon to my next batch..
lordly but I love cinnamon bread.
