I am going to put a few of my recipes that..through the years, I have "made up" or modified. So it might not be in exact measurements.. ( I don't measure..)
I am a "pinch of this and pinch of that" cook, so bear with me..
But these are some of my family's favorites and mine of course.. LOL

Chicken Pastry's

Make your own pie crust or
If you can use 1 box of pie crust mix.
Add 1 ..3oz pkg of softened cream cheese.
add 1/4 cup cold water.
Mix very very well  ( I put mine in a food processer)

Roll out like you would pie crust.. ( it will be very fragile and softer than pie crust)
cut with a biscuit cutter.
Put a dab of Underwood chicken or ham spread in the center of each one and fold over ( in a half moon shape)
Press and crimp with a fork on edges.

Put on cookie cheet

Bake 350.. until golden brown 

( I have taken these to lots of parties and they are fabulous)




   

Lasagna
Crumble up and fry Hamburger.. ( as much as you want.) I use 2-3 #
Cook it with chopped onion, Jalapeno's, garlic, basil, , salt/pepper, splash of Worcestershire, sprinkle of Italian seasoning( not much)
Add  tomato sauce.
Simmer

Drain hamburger and add fat to the lasagna water that is boiling, so that the noodles don't stick together

Mix 1 carton of Ricotta cheese and 1 egg and some Parmesan cheese. kind of whip it up.

layer.. in greased pan.

cover with foil.. bake at 350 for 50 minutes

Baked Cheese Grits
     
Boil 4 cups of water ..add salt..

Add 1 1/4  cup grits 
Turn down fire and cook for 5-6 minutes until thickish.

Take out about 1/2 cooked grits and put in a small bowl..
Add to this 2 beaten eggs plus 4 T. bacon grease.

Put back in the pan with the rest of the grits mixing well.

Add 1 1/2 cups shredded ( your choice ) cheese..
( not velvetta , unless that is all you have)

Pour in greased casserole pan
Bake at 325 for 35-50 minutes or until set.
Take out and let stand for about 10 minutes.

"You can add jalepenos, or sausage or bacon or anything to it if you want. I use bacon.
"



Baking Powder Biscuits
     
3 cups flour
4 teasp. baking powder
1\2 teasp. salt
2 large Tbls Crisco... (cut this in til the texture is like cornmeal.)
Add milk til the dough pulls from the sides.

Toss on a lightly floured board or towel..
Lightly knead.. but not very much.. just until it kind of forms together.
Pat out in the thickness you want your biscuits
Cut with a floured biscuit cutter or glass.
Put in a greased pan with sides touching..

Bake at 374 for 20 minutes or until browned.



Cheesy Meat Balls
     
3# hamburger..... seasoned with onion, garlic, season salt, Greek seasoning and a touch of salad supreme.. ( or what ever you want in it )
3 eggs

Mix together and make into balls
Put them on a cookie sheeet and bake at 350 for 20 minutes or whenever they are done but juicy.

Throw balls in a crock pot...on low.

In another pot on the stove.. with the fire on low...

Mix together 2 jars of cheeze whiz
2 pkgs of philly cheese
16 oz carton of sour cream.
4 heaping tablespoons of picante sauce.

Stir until melted. ( make sure it doesn't burn on the bottom)

Pour over hamburger balls in crock pot and keep warm.
Serve with a bag of tortilla chips.

(This is the greatest for party's)



Ziploc Omelet

(This works great !!! Good for when all your family is together.)
The best part is that no one has to wait for their special omelet !!!)

Have everyone write their name on a quart-size Ziploc freezer bag with permanent marker.

Crack 2-3 eggs (large or extra-large) into the bag (not more than 3) shake to combine them.
Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.
Each person adds what they want to their bag and shake it up.
Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for 13-15 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.
Open the bags and the omelet will roll out easily.

Be prepared for everyone to be amazed.

If you want to really impress.. serve with fresh fruit and biscuits.
It's fun and  everyone gets involved in the process and has just exactly the kind of omelet that they like. :)



Cheese Puffs
 
1/2 # grated Cheddar cheese

1/2 cup butter or margarine

1 cup flour


Mix together in large bowl.
Roll dough into balls the size of large marbles.

Place on a greased cookie sheet and bake at 350°F for 15 minutes.

You can use different cheeses, add chopped olives, mushrooms, onions, garlic salt, parsley, or finely chopped ham or sausage when mixing. Use your imagination.
These are puffy and really good.

I have never submitted a receipe on this forum, but one of my family's favorites is the following, and since it is the "soup" season---this one is wonderful for a cold, cold day or night or for breakfast or when you just want to......well never mind.........

                                          Santa Fe Soup

                   1 can corn  --- do not drain
                   1 can pinto beans ----do not drain
                   1 lb. ground beef ---- brown and drain
                   1 can diced tomatoes -----do not drain
                   1 can Rotel tomatoes ----- do not drain[/color
                   (optional) 1 small can diced jalapenos
                   1 small can tomato sauce
                   1 lb. velveeta cheese
                   1-2 sliced and diced onions


                    Cut the velveeta into small cubes.  Throw everything into a crockpot
                    or pan.
                    Cook until cheese is melted.  Serve with warm tortillas. 

                    Enjoy with someone you love! That always makes it taste better
                    anyway!

We've made "Ziploc Omelets" calling them Omelets in a Bag.

They are absolutely wonderful! A great way to get rid of left overs and feed a large family.

We've had them on holidays - where everyone mixes their bag the night before. In the morning, it's a snap to boil them . . . and instant hot meal.

Yummy!!! :D
