Sure do need an answer to this one.  Here's a hint pertaining (allegedly) to the originator of the quote:

As he traveled from country to country fighting battles he rode a horse named "Nickel". During a stop, _?_ was served a crude meal that included a crumbly, coarse, dark brown bread. He didn't like it and announced the bread, "bon pour Nickel" which in French means, "good for Nickel". Over time the words were blended and changed until 'bon pour Nickel" became 'Pumpernickel".

Hey Del,  ever heard that story?

Here's one that's a bit more contemporary to chew on while you try to remember who rode a horse named Nickel.  Guess we can assume Nickel wasn't a "quarter" horse.

I've heard that story but the one I like is that pumper or a similar word means flatulance in German.  Nickel or a similar word means goblin.   :o

Some one who speaks better German than I do said it was on the right track.  Pumpernickel means "flatulance of goblins' loosely translated.  And if you use more rye than modern recipes and use sourdough in it, I would guess from other experiments with bread that this would be very true. :P ::) ;D
