Tale of a Tongue

Back in 2001 a family friend had a beef butchered and ended up with a tongue, they didn't want.  I was offered this very choice piece fer free and I said shooore.  About a month later my pard Matt and I decided to set up at a large local Antique Tractor and Machinery Show, right between the draft horses and the steam traction engines.  We just kinda fit in.

Well this tongue ended up in the gear when we left Friday morning and by Saterday morning it was thawed.  We decided ta boil it up, let it cool and skin it and slice it and fry the slices in butter fer a late night snack. 

I put the tongue in a dutch oven, covered it with water and started to pile up some coals to set the oven on so the water would boil.  Before I got the oven on the coals, two young ladies from a local radio station came by handing out radio statio junk ta folks.  Well they seemed interested in what we were doing, we offered them a couple of fresh cinnamon rolls, but they did not wish to try them.

I think they were scared of food cooked outside or their mothers had told them not to take food from a couple of cowboy cooks, or the skinnly little things were afraid they could not eat a cinnimon roll that was so big only seven would fit in a 12 inch deep dutch oven.

Well they were curious enough to ask what was in the oven that wasn't on the fire, so with a grin I said come here and I will show you.  Well when I lifted that lid I'll be durned if that tongue did not jump right out of the oven an lick one of those ladies on the cheek.  Did not know radio station ladies could walk away so fast, they didn't come within a 100 yards of our cook camp the rest of the weekend. ;D :P :P :P :P :P :P :P ::)

What a hoot. I didn't know tongues could jump.  ??? My dad enjoys tongue, heart, and liver. I have had heart and liver, not my favorite. But, I will not eat tongue.

Oh but tongue is the best part, boil it, skin it and fry it in REAL BUTTER, put it on some HOMEMADE BREAD, little REAL MAYO, bit of HORSERADISH and some CHEDDAR CHEESE.  Mighty fine eatin'.  Brine it for a few days and smoke it, awful good, folks back east paid  up to $10 fer a buffalo tounge done up that way in the 1870's, remember bout have the price of a new Colt.

A really good Mexican Eatin' House al' have tongue Tacos, real ones where they put the meat in the corn tortilla and then fry it, awful good eatin'. 

Got and idear', how bout a Mac Tonguewitch, served up by Ronald himself, special sauce, sesame seed bun. :P

Oh no, cooked right it is the most tender part, as a muscle it don't really have ta do much. lick a nose, lick a butt now and then, but there is skin on the outside, so the eatin' part never gets a cow booger or poop on it. :P :P :P

My Grandma used to have tongue for supper pretty regular like, and I really enjoyed it; made good sammiches, and was just tasty as a part of a boiled dinner pot.  Can't find ennybuddy who'll have anything to do with one, now, though.

Yee-haa!  Road trip!!!!!!  Lessee, Las Vegas to Lincoln(?), it'll take me two days, and one hard drivin' day, or two easy ones, to the land of cheese.  Oh, how I wish. Although, one never knows, does one!!!???   :D ;D
