Cause I'm mean.   Here about 12 quarts of baked mac and cheese with lots of sharp cheddar.     For contrast them boots are 11 1/2 EE's.

Those biscuits and gravy were good, and the giant pot of mac and cheese wasn't bad either-even my daughter "Alyssa the Picky" liked it-at least until that wind storm blew through and sent us all into the cabin.

That mac and cheese was earlier in the month, done that 16 up twice that way, plan on having 2 more by June.  Need one like Liz's Bertha with the gravy, got a maybe on getting one a bit bigger.

The Cawffee and Hot water are ready to drink. Enjoy! I had a bagel and cream cheese with my Cawffee. I put some strawberry jam on the cream cheese. It was mighty tasty. The rain has not arrived yet, as predicted. I figger that it should be by sun rise.

Arcey, That sounds like mighty good eat in' for Breakfast. Morning comfort food. Today is trash day, We had to get out early and get the trash to the alley. The truck comes early on Sat. Moose has got errands to run today, so we will go to the Stock Show tomorrow.  No clue for lunch, I am on my own because Moose won't be here for lunch.

Snow/rain here, no one seems to know exactly what is going to happen.

Got to clean the kitchen up after work, wife made something for her pot-luck for her all day scrap-bookin' thingy.   

I carried pease porridge to her Buick this mornin' in a crock-pot,  lol she decided to check the net even though I told her I had a fresh recipe I made in my files.   Yeah, she said she should have looked at mine, hers is OK, but why be happy with that.

Del's storm, Linus, is supposed to get here this evening. Maybe 6" by Sunday night.

I have 25 lbs of KIK BP coming from Powder Inc. Arrived in Little Rock this morning. Probably here on Tuesday. Loaded a bunch of shotgun shells this week for the upcoming season and ran out of FFg.

Grab a piece of biscuit dough in your hand and make a biscuit when done that is about the size of a small cat head.  As in this, that's a 14" shallow and them look about 3" across, I think they could be called cat  ;)heads.

Buck, The chili will prolly taste like Wendy's chili, be sure and cut up some celery in it too. It has gotten overcast and the temp is in the low 40s. Victoria and I had some Sonic chili dogs for lunch. The rain still has not arrived, but it looks like it could start any minute. No clue for Supper tonight. Vegetable beef soup or maybe some real Texas Chili.

This is the recipe I pulled up from somewhere and That's what they called them:

Southern Cat Head Biscuits


Ingredients
--------------------------------------------------------------------------------
2 cups all-purposed flour
1/4 tsp salt
2 tbs sugar
4 tsp baking powder
1/2 tsp cream of tartar
1/2 cup vegetable shortening
2/3 cup milk

How to make it
--------------------------------------------------------------------------------
Preheat oven to 425
Mix dry ingredients in large mixing bowl
Work in shortening with a pastry blender until you have a fine, irregular mixture of small crumbs.
Add milk all at once and stir with fork until dough comes together.
Turn out on lightly floured surface and GENTLY knead dough no more than 12 or 14 times. This is the critical step. If you over knead you will develop the flour gluten and have tough biscuits.
Pat dough lightly until it is slightly more than 1/2 inch thick
At this point you can use a sharp knife and cut into squares or other shapes or use a 2 inch round cutter or empty can. If using round cutter, press scraps together and form a couple of extra biscuits.
Place at least one inch apart on ungreased baking or cookie sheet.
Bake for about 15 minutes until puffy and browned.

"Cat head biscuits" does seem to be a primarily Southern term.?
Del is correct, one pinches or "chokes" off a small amount of bread dough during the bread making process. (the dough is usually a bit more moist than you would want for bread making)
This in turn is "Pan" baked and/or baked in a sallow Dutch oven, as Del has done.
This method can produce biscuits for the eating while the Bread dough is style rising for the baking of a soft bread loaf.

The dough is always supposed to be more moist for biscuits than for a yeast type bread, also the less you work a quick bread the better and you can't knead a yeast bread too much.
