Thanks for the Cawffee this morning. It is cloudy and 33 right now, with a high around 50. Moose had OpenHouse at school last night, she did not get home till after 2000. We finished off the last of the Beef stew. No clue for tonight. Oatmeal and toast for breakfast. Del, I am glad that the tamales turned out good, I knew that they would. I would have liked to sampled some.

Del, That's my kind of leftovers. It looks like a Fritos pie for supper tonight. Now, you got me hungry for Tamales. We have a Mexican bakery that makes good ones. I am good for 2 dozen, I will make a run tomorrow morning. The sun is down and the temp is dropping. It got up to 50 today, and back to just above freezing. A fire in the fireplace will feel good tonight.

The Country Hams have too much salt in them, they make me retain too much water. The City Hams are less salty.

County Hams can be very salty! And strong in their flavor.
They need to be properly prepared.
It requires a great deal of socking and washing to get what I think you are calling a "City Ham"??

A so called country ham is a fully cured ham that will keep for a couple years in a dry cool environment, a city ham has less salt in it and requires being kept in the ice box to prevent spoilage.  A city ham can be made in a few hours, a true country cured hame takes at least a couple of weeks, not all hams called country, Virginia or what ever are a true cured ham.

I also wish to announce to those familiar with The General, that due to his recent and somewhat prolonged illness, he will be retiring although final fate is unknown at this time.  It will be replaced in a couple of Days by The Field Marshall, so named because of his gaudy coat and the fact it has 4-WD, as in a real 4WD not a city type work it all from the cab type.  It is still a F-150, but it does have a proper transmission in it and it also has that in-line 300cid 6 that I like so well, wasn't what I really wanted but a lot less miles on it and the price is right and I really don't mind if it's:

The heater works great, the power steering works great and all the window go up and down and it has a working radio, not sure about the air, but I doubt I'd use it much anyway, and it uses a key. ;D
