I would describe it as something with rice. Don't know what it would be to make it "cowboy" - beans with rice is already "beans with rice"

It don't have to be uncooked, but it ought to be rice, since sushi means "with rice" - Del, when was rice readily available across the west?

From the time whites first started going there, was almost as common as beans and didn't require soaking, South Carolina, Arkansas and California were all big producers by the Civil War,  might have been hard to get during the war, but a common staple that traveled the trails with wagon trains.

sushi,  means with rice ?...  I did not know that ,  :-\   learnt something I did  :)

OK, wild long grain Rice, with smoked Brisket ( I did not mean raw) and bacon, got have bacon .

I have to say, when I discovered sushi for myself about 10 years ago, I was a bit standoffish because of the Raw label.
There are still some I won't or can't abide , but I do enjoy many of them...

I kinda see it as when venison and beef, or buffalo tongue, was stripped and hung to dry. You know someone couldn't wait and got hungry enough to pull off some half-dried chunks and wrapped it around whatever was left in the rice pot, or bean pot, or field pea pot . .

I can see that happening. In fact, when I make jerky some always gets eaten before it gets fully jerked.  Whatcha call those Chinese grills that cook while you watch?  Ever eat fresh mountain oysters hot off the branding iron heater?
