but what actually ejects the emtpy fired brass case.  When the bolt retracts completely with finger lever fully open, does the top of carrier kick out the brass? and can extractor be tuned to cause the brass to be kicked out in a certain direction besides straight up and forward?

There is no actual "ejector."  The carrier rising kicks out the empties.  You can tune the extractor somewhat.  Sometimes they are to tight and sometimes to loose.
