This idea sounds good but I want to hear from you.

Would the grip frame of an EMF Great Western II fit on the steel frame of a Pietta 1851 Navy?

Should, might take some minor fitting.  Pietta puts the GWII grip frame on their all-steel 61 Navies.  (That's actually a Ruger term for their one piece grip frame.  Colt style guns have a separate trigger guard and back strap.  You need both pieces to replace the brass parts on the Pietta.)  Only problem is by the time you buy the trigger guard, back strap and new grip(s) it will probably cost more than buying a new gun.

Yes, it will.  I put the steel BS & TG from a GWII with the white faux ivory grips on a .36 cal Pietta US Marshall model '51 without any trouble.  Only one screw hole on the backstrap didn't line up perfectly and that was fixed by spreading the fork a little.

I bought the finished & blued BS & TG about a year an a half ago, before the prices went sky high.  The white grips I got for free from a good pard.  Soaking the BS &B TG in vinegar overnight removed the blueing.

Here's a picture of it:

Now THAT is a NICE looking gun.  Simple yet very elegant!!

The contour of those grips are much better looking than a Pietta navy grip. Those grips on your gun would be better for point shooting since the over flare of the Pietta Navy causes a strange grip feeling and seems to make a person point shoot high.......and your GW11 type grips aren't overly flared.
