I had no  time  this year to make jerky :'( Made the doe into steaks and canned the rest. We use the canned meat for tacos and stews ;). Good luck to the rest of you this year!

Colddragoon, would you give me your venison canning recipe?  You can do it by PM if you prefer.

I'll be hunting next week with my '76 in 45/75 a few times. I use my scoped modern rifle first weekend though. Went to adjust the windage on my 45/60 that I put the trueglow type from sight on last week, and wouldn't you know I managed to rap the optical element with a brass punch, and broke it off the top. I reglued one temporarily, but I'll need to replace it.

Anyhow, good luck to you hunters - and I WILL take a pics if I get one over 125 pounds  :D

I just use the directions in a canning book for meat.  I pak the meat  raw in clean quart jars at 15 lbs for 90 minutes.  I add a teaspoon of salt to each jar. Not much to it  ;D

Well tomorrow morning boys! - hopefully you will hear the thunder of the mighty 45-75 and the thump of old swampy hitting the ground ;D this year I will post a pic no matter what it is. Good luck to all who start tomorrow or already have.

Deer season has been warmer than most hunter like , but it has proven to be an enjoyable season . I had the privilege to see my 13 year old son take his first Deer . He shot a young Doe and did an excellent job ,she was down and never knew we were in the woods . I enjoy when there is no tracking involved . He made a excellent neck shot .
Today was a good day I went to scout and prepare for this weekend I got to the woods at about 2:30 this afternoon . I was sitting in a ground blind watching and listening  .  I  sat there for about an hour when I heard something behind me after about 10 minutes of trying to see what it was I finally spotted it .It was a nice buck the best I had seen this season . It not only came in from behind me BUT it also was on my right side so I make  a left handed shot instead of trying to get all twisted around to shoot from my right shoulder . I fired and the smoke flew the Buck turned and darted back through the woods . I sat there until I couldn't wait any longer I had to see what was up . I walked over to where he was standing when I shot and there was nothing ? I started walking down the trail I had watched him run down and still no sign of a hit . I stopped and started watching the woods and noticed him slowly on the move , he was  slowly moving farther into the woods and I slowly moved stalking and trying not to spook him after about 60 yards I found a spot where he had laid down and I knew I had a good hit on him . I trailed him for about another 75 yards and I found him down laying at the edge of the  slough  . I had aimed for the neck and that was where I hit him the Black Dawge ammo had done an excellent job .
Will post pictures in a couple days .

Very nice Rowdy! Looks like you and the boy had a very good season :)

Not so lucky on my end as far as bucks go - never even saw one during the 9 day season. Brought down 2 doe, but I had my regular deer gun for those.

Congrats on the success! ;)

Here is a picture from a few years ago . Nice buck that made excellent jerky . I purchased a jerky cannon and it has made jerky very easy .

That's my 45-60 . I got off work that morning and decided to go sit my blind up at another spot . So I sit my blind up and decide to sit in it for a few minutes . I was siting there watching the woods , when he showed up . The funny thing is I  had the next day off work to hunt . But who would of thought he would show up that afternoon .
