Is that a totally custom ordered "Sheriff", or is that one of the Limited Run guns?

It's totally custom. The Lew Horton limited runs were done awhile back and had their "Us Ivory" grips and a normal hammer.

Davidson's also did a limited run of 50, 3" ejectorless Sheriff models that also had the Bisley style hammer.

Just happened on your posting, and that gun looks exactly like one for sale I am watching on gunbroker.  Are you selling that gorgeous gun?

Sorry to hear that, Charlie.  You're certainly not alone these days.
