Morning folks. Coffee and tea are hot.

I love the smell of Black Powder in the morning!

I like my coffee hot and most the time my tea cold.  But hot tea sounds good this mornin'  Ya got any Lap Sang Soushong?   Got a hankerin' fer some tarry smokey tastin' tea. ;D ;D

If not some Earl Grey would be nice, but put a spoonful of honey in that.  If not some Oolong would be ok.  Even some Darjeeling would work.  Slim looks and quickly hids his box of Lipton bags. ;D ;D ;D

PS Never make iced tea out of Lap Sang Soushong, it just don't work out well. :P ::)

Actually, there are Tetley Tea bags.  I put a teaspoon of black strap 'lasses in mine. ;D

I remember the name now, from research, I don't think it is any store I shop on a regular basis.

How ever my research says, yes they threw the tea in the harbors, but went right on drinkin' the smuggled untaxed tea brought in by the Dutch smugglers.  Coffee needed the South American plantations being started in the 1820's and the US military replacing the Rum/Whiskey ration with coffee for the drink to really catch on, before that it was too expensive. ;D

Iced Tea was served by Delmonico's in New York in the summer time in the 1860's and on the Rock Island RR by the 1870's.  Once again the 1904 St. Louis World's Fair claim's things they didn't invent. ;D ;D  The things they claim make me think they spent more time inventin' than fairin'. ;D ;D

As for BBQ / grilling / smoked

BBQ meat cooked slow with indirect moist heat ( not over the fire)150-250 deg F, 3-12 hrs. Most of the time BBQ uses some smoke and will have a dark pink ring under the sevfice the deeper the ring the more smoke in the meat.

Grilled cooked with high heat directly over the fire, 400+ deg F some times as high as 1000 deg. Grilled food has little smoke in the meat, most if any is on the outside.

Smoked meat is most offten cured with salt and smoked with a low heat, for long times 100-150 deg F for 12-36 hrs.




The round barrel smokers that are sold places like K-mart and Walmart, work OK for BBQ. They are a bit of a pain to keep the heat steady, but a good meal can be had from one. The ones that look like tow barrels layed on there side work very good. You will have your fire in the first that is just a bit lowwer than the other. The thicker the walls the better it will hold the heat, so the less you will have to watch it. This is nice when cooking something for 10-12 hours.

Suace is up to you they are all good. For me Beef no sauce.
Pork and Chicken BBQed till just cooked thur then grilled with sauce, this will give you a good amount of smoke in the meat and carmalize the sauce to the outside.

My favorite sauce one I make.
1 lbs dark brown sugur
12 oz Molases
2 oz tabasco
32 oz catsup
garlic, minced onion, black pepper and other herbs and spices as I my grab.

Cook it all at a slow simer about 30 min, keep in frig.

Where does it go? It gets filtered out in various internal places, including the kidneys. But it is not what makes poop the color it is. Know why poop is that color?

That might be a bit chilly since the water is from the melting snow. It is supposed to get into the low 40's tomorrow.
