Regarding 56-50 blanks, Tex-X Ammunition has them listed on their web site as shown below.  There must be other sources out there, but I do know of this one for sure, but don't know if it's what your looking for:

I personally think that the choice of caliber of your Spencer should be based on what you are most likely going to be using the gun for.  If you want a gun just for the fun of it and don't plan on shooting it a great deal than the 56-50 would be fine and there is also a little prestige involved with owing a 56-50 Spencer.  But if you are going to be shooting it mostly for reenacting and or don't load your own live rounds than the 44-40 might be a better bet for you.  It is easier and cheaper to buy live 44-40 than trying to buy live 56-50. Reloading 44-40 is also easier and cheaper than reloading 56-50. Making the blanks for the 44-40 does required buying some equipment but the only alternative for the 56-50 is to use the plastic blanks from S & S (and others).  I think they are about 50 cents each now and you have to stop and pick them up to make it financially feasible to use for reenacting.  BTW I have been told that if you add black powder to the plastic shell they will only last for about 5 firings and then they crack.
If I can get the 410 hulls off the Skeet field for free I can make blanks for my 44-40 Spencer for around 10 cents each and I don't have to pick them up.
Whichever caliber you decide on when it comes time to buy I would appreciate it if you would fire me off an e-mail and let me quote you on the price of the gun that I can get you one.
As far as a revolver is concerned an 1851 colt in .36 would definitely be an appropriate side arm for a CW soldier issued a Spencer carbine.

Hi Major,

C.M. Roy asked the following question - If you have any information on blanks for the 56-50 that would work in the reenactments I would love to hear about them. I'm only familiar with the Ten-X blanks which is why I mentioned them in my post.

I'm waiting on how many blanks for $60.00 from Ten-X.  As soon as I hear I'll add that info to this post.

Two Flints: I've purchased the TenX 56-50 blanks. They come in boxes of 50 and seem to work well at a reenactment.

So if the blanks are $60 for 50 and you add shipping to that, say $5 that's $65 for 50 blanks.  This means that they are about $1.30 each.  I regularly shoot at least 150 blanks per battle and there are usually 2 battles per weekend.  That would be 300 blanks X $1.30 for a total of $390 for ammo for the weekend.  With my 44-40 I can get away with about $30 for the weekend for ammo.  And I can use the extra money I didn't spend on ammo to buy guns and equipment for reenacting and shooting.  Just thought I would lay it out in dollars and cents.

Hello all,

      I've never tried the the TEN-X blanks though I have used their live rounds with no problems in my repro 60 carbine. I'll probably order up some of the TEN-X blanks in the next week or so just to try them out.
      I have used the S & S plastic blanks for years with my original rifle and carbine with no problems. I like them for several reasons: 1. For display, the color is close to the original copper cased round (for display only rounds I painted the "bullet" a lead color).  2. They are easily reloaded.
