There appears to be some confusion.  I'M SO CONFUSED!!  Ok Ok, if you get a Pietta '51, you get a straight cut cylinder and a non-rebated water table.  Unless you get a .44 Pietta '51.  In which case you get a Rebate (stepped) cylinder and a Rebated water table.  If you get a Pietta 1860, you get a Stepped cylinder and a Rebated water table.  The frames of the '51s are different from the frames of the '60s.
Unless you you get a .44 '51 in which case you get the same frame/cylinder as the 1860.

Now, Pietta has found (prolly always knew) there is just enough clearance between the '51 water table to  allow a stepped '60 cylinder to fit and function.  So now we see their "new" 2016 offerings, pairing the stepped cylinder with the straight water table.  Not historically correct, buy hysterically functional and kinda Cool.

Now, to a prior comment about the space between the rear of the straight cut water table and the stepped cylinder, being an excellent place for crud to build up.  Nope.  Nada.  Same Same spacing as the '51 cylinder.  No appreciable crud build up atall.  Works just fine.
the onliest fouling of the water table occurs just in front of the cylinder.  Wipe it down between stages.
