Changing Grip style on a SAA

After having shot my new Pietta 1873s I have come to the conclusion that my left hand is not quite strong enough for the standard grip on the Pietta and slows me down and reduces my accuracy. My left hand prefers Birdseye grips but the right finds them uncomfortable. Is it possible to change the style to a birdseye on one pistol and leave the other alone

I assume you mean birds head and the answer is yes if you can find the parts.

Thanks Pettifogger thats why I couldnt find anything on them I was searching Birdseye grips

An additional.  For the most part, Pietta doesn't do  "Birdshead" Gripframes.  The Pietta offering has pronounced "hump" at the top of the Gripframes and that design is actually taken from the Colt "Thunderer" SA. 
I would suggest you enquire the availability of that grip set at VTI Gunparts, Dixie Gun Works and EMF.  Those importers often offer guns with the Thunderer Gripframes.
