Soft or Hard Peaches

Yeah.  I want to try my hand at baking a peach pie or cobbler.  For fresh fruit eating, I usually like my peaches crispy and sweet.  Can I use those or do I have to use them really soft ones my wife likes?

The harder, slightly less ripe peaches or any fruit will be better for pies, cobblers and canning.  The others will often turn in to mush.  Now if you were making a peach custard pie, the softer, riper ones would cook apart better.
