I have shot several categories but speed is not my game due to recovering from a shoulder injury, especially the shotgun stages (lucky for me I shoot right and its the left shoulder). My question is just for the average shooter which is the fastest category, cowboy, gunfighter etc..... i have been shooting duelest due to my shoulder, it seems to me that the cowboy category is the fastest.

Depends on where you shoot...Around here the fastest shooters are a Duelist and a Classic Cowboy!

There really is no fastest category.  The fastest shooters can pretty much move from category to category and excel at any of them.  At big matches some form of two handed shooter will usually finish first but it's not uncommon, depending upon who shows up at the match, to see a one hander finishing in the top five or even second or third, again depending upon who shows up for the match.

More often than not what actually determines the winner of the match is who screws up the least rather than who shoots the fastest.  In a rank point match I have seen the fastest shooter of the match, overall time wise, actually take second place or even third and the difference in times between first second and third place be in the 100ths of a second.  :o

The fastest category is what used to be called Traditional.  That is: holding the pistol with both hands and thumbing the hammer with the off hand.  Rifle can be either a tricked out '73 or Marlin '94.  The shotgun can be either a double or a '97.

Gunfighter has a potential of being the fastest category except for the rule that requires pistols to be shot "double duelist" where pistols can't be staged on split pistol stages.

The only speed variable between categories is the way the  pistols are shot.  In raw speed Gunfighter wins out.  In speed plus accuracy, Traditional wins out.  (See Doc Shapiro's and Lead Dispenser's World Record times websites.)
