The improved quality of the Piette Cap and Ball pistols?  I just picked up a pair, and they are  much better out of the box than the last ones I bought.  Much smoother, better fit up, and less tinkering to get them running.  In fact, I think these may be a little better than the last Uberti I had.

Griz,

I can't comment specifically on Pietta Cap Guns as I don't work on them all that often.  I can comment the current manufacture Pietta replicas of the SAA are really well made.  The best value for dollar in CAS handguns today.  They take appreciably less work to make "run" than anything else.  Except:  There are some of their line that have no removable cylinder bushing (Alcimista).  I don't like those.

While your report is good to hear, the quality of the early Pieta pistols was what made me start buying Uberti pistols and rifles, I've never looked back...!

I agree, Bill.  I got some real stinkers from them some years back, and had avoided them ever since.  I purchased these two after handling an example a friend had.  It was very good, so I took a chance.  FWIW, I have seen a few less than sterling examples made by Uberti - two Navys that took different size ball for example. ???  I think the makers assume that "good enough" will do for an arm they believe will be used little if at all.  They figure that without knowing about the "true believers" in our ranks! ;D
