I plan on picking up an Uberti Yellowboy in .45 LC. My only question is should I go for the 19" round barrel carbine or the 24 1/4" octogon barrel. The shorter barrel should move from target to target faster but the longer barrel should be more accurate. Any suggestions which would be better for CAS?

If you like the 19" round barrel then go for it.  It will be plenty accurate for CAS. :)

both are great for CAS... If you can, lift and shoulder both and see which feels best for you.
You may like the extra heft or not, of the 24 1/4" octogon barrel.

I had a 19" Saddle Ring Carbine Yellowboy in 38 back in the eighties great pointer and felt good.

They also make a 20 octagonal barrel that give you a quick handling rifle that has less recoil because of the added weight.

I have two yellerboys, one in 45, the other 38.  I have had no problems (even avoided the dreaded loading gate break, so far) and think they are an excellent looking gun and a pretty good bargain, compared to the 73.  Same basic internals and at least a hundred cheaper.

As for barrels and configurations, one caution about the carbine.  If you want to change or modify the front sight, it is a lot more work, as the barrel band IS the sight.  I think a carbine is the most authentic, especially for an early impression, but that's just an opinion.

I bought mine in 1983 from Navy Arms, then the only caliber available was 38 in SR  carbine.
It was very nice, I used it for 5 or 6 years never a problem (back then they were about $350-375 as I recall )
I only sold it because on the Birth of our Daughter, new baby needs new funds.
Also it was out of battery Cartridge wise , from what I was then shooting.
I remember I sold it for $400 in 89 , used but still in fine shape.

I should add... I still see it at shoots sometimes and it is the fellows main gun.

I have a round-barrel carbine version of the '73. My next one will be the '66 short rifle with the 20" bbl. Yeah, I changed my front sight, but it isn't an easy swap. I like the balance of the short rifle, too.

At the range and size targets we shoot in CAS, 16" will do just fine.  We often shoot rifle targets with pistols for fun, it's no big feat. Shooting them fast and hitting them is another jellyroll.

I have Henry, '66, and '73, all in 24 1/4", but mine are all .44-40.

I can't imagine anything else. 

Of course I grew up with rifles, not carbines.  The only carbines I ever liked were the M-1/M-2 series, and the 600 Remington .35.
