Does anyone know if the new EMF Sheriff models will accept two piece grips? I know some come with them and some come with one piece.

Major 2

It's nothing to fit either or ,,,
If they are two pieces OEM,  aside from the screw, there is a small blind idler pin to locate the two halves.
This pin is not present if one piece grip relying on the spacer and pinch fit.

So, the fix, if going to two halves is either fit a pin or what I do... Locate the grip half and trace around the inside of the frame on to the grip itself.
I then fashion a thin shim maybe 3/16" wood (Formica works well) also traced inside the frame
Cut fitted and epoxied on the back of the grip shell (making a perimeter 3/16" step) then drill to match the single screw and Bob's your uncle.
Outside fitting is as per usual...
when planets align...do the deal !

At one time Uberti made some two piece plastic checkered grips that had a built-in spacer attached to fit against the backstrap.  The grips were kinda crappy and very easy to crack when tightening the screw, some were cracked out of the box, but replacements always fit perfectly.  I don't know why they can't do that with wood replacement grips!

I'm not talking about the older hard rubber eagle Cimarron grips made by NC Ordnance that had a built-in spacer and glued together.  I have one of those and like it.

So, I'm curious if Pietta two-piece grips use a locator pin or something else.

I think they use the same pin (I've always called it an index pin) system for their two piece grips, like colts. I just wasn't sure if on the guns with one piece grips the hole for the index pin was already drilled and it would be a matter of just putting a roll pin or something in and getting the NC Ordnance Colt hard rubber style 2 piece stocks...which is ideally what I wanted to do. If not I may just get some bison bone 1 piece stocks made for it.
