There were many types of buttons and fastners in the period including ones like the ones today.  There were also a lot more styes than the types we see today.  The biggest thing is modern folks wear them to small, the cut has changed little if any.  According to the Carhart rep I talked to on their uninsulated bibs of brown duck, all they've changed is the adding of the pockets on the bib. 

The 1890's pair he had on their display trailer sure looked that way to me, he wouldn't let me take them out of the glass case though.

You know another idea on getting a pair of overalls closer to what you're looking for.  Are there any Menonites in your area?  A lot of time the women do sewing for the extra money.  We have several in our area and I think if you could tell one of the seamtress's what you want they could supply it. as they make bib overalls with very few pockets quite often.
