Some of the first 1860 Colts were made with Navy size grips, so either grip size is acceptable as authentic.  Here is a link to an 1860
for sale and take a close look at the grips they look like a Pietta grip.  Things are not always as we think them to be.

I probably walked past that one in the case at RI auction.....I live nearby.
Serial #61.......of 200,000+

I tend to think in terms of: readily available, or commonly used items of the period, rather than yeah they made 50 of them, or if they'd thought of it, then they'd done it too. But that's my way of thinking....I'm not forcing that on anyone..especially SASS, which believe or not, I'm a past president & organizer in the establishment of a well known midwest SASS club.

My Shooting Pard Judah, bought a pair of new 1860 Sheriff model Pietta's at Winter Range from Pietta who was a vendor. 5 1/2" with the new navy grip. Very nice indeed !
Best set of 60's I have ever seen.

Bending the thread subject a bit, but:

Coffinmaker mentioned preferring the brass rifle to the 73..  Did you notice the stock drop is different?  My 66 goes up to a sight picture, the 73 does not, too much barrel shows above the rear sight...I understand the current issue has changed them to the same.
