One reason I like roasted wild pork,it has more flavor than store bought. Taste like pork did when I was a kid. And I dont like fixin fence. So Wild Pig huntin is a win win situation ,here in Texas. ,,,,,,,Dusty

These little SOBs tore my pasture & lawn up, finally trapped them, 3 female & a male.... the male was gelded and fattened for 6 months
the females were meat within a week or 2.... Nov. 2012
One was split on the smoker & served at our Company Christmas party  :)

The male was BBQ on the 4 of July.

I have not cooked any, but did have the great pleasure of eating some wild boar.  A friend shot it down south.   I have to say, it was the best bacon I have ever eaten as well.  It was fairly lean if that is not an oxymoron in describing bacon.   Made the best BLT being real meaty, with just enough fat to make it crispy.   MMMM, we need a drool emoticon.

While a different species altogether, I have also eaten javelina slow roasted over mesquite, that was also most excellent.

I agree with you feller's.The wild pork is on the top of my list of favorite's. The little Javellina roasted over the mesquite coal's with onion's an peper's aint half bad!Have one feller has been wanting a black and white boar. Think I found him one, and look's like he will make some fine bacon and  smoke- sausage ,,,,,,,,Dusty

Dusty, that cut o' puerco you posted a photo of has me licking my chops. We have only a very few wild hogs in Oregon and the state Departent of Agriculture aims to keep it that way with shoot-on-sight rules, but I sure will admit how much I would enjoy a small one for the BBQ now and then.
