I do not own one but am doing the same research you are. Here is what I have gleaned lurking and as a member of CAS City forums the past year or so:

What brand is the .45-60?  The Chapparal's are hit and miss according to just about everyone.  Many of them are functional and accurate, some require quite a bit of "tuning" to work well.  If you are not up for that work, it likely would be expensive.  Short of having a competent smith check the piece prior to purchase, there is no way to know what you are getting into.

Of those three, the consensus seems to be that the .45-60 is easier to reload--straight walled and making cases from the .45-70 is easier than making cases for the .45-75 (since you need .348 cases, etc.).  The .40-60 just is not that popular, you will find more components for the .45s I would bet anything.  The reloading data posted here is predominantly for the two .45 calibers.

680.00 is about right for the Chappies, they seem to linger so you might push the sellers, see can they go better, if the .45-60 is the Uberti, it's priced about right with dies from what I have seen, a good deal even.    I personally am saving the extra dough for a Cimarron/Uberti.  I want either of the .45 calibers.

Damn good luck to you!
