First Saddlebags

I'm building a set of 1885 US saddlebags.  I have the patterns made from the #29 ordinance manual, but I have a few questions for those who might own or have seen these bags in person.

1) what weight and type of leather should I use & best sources?

2) what is the best assembly order?

3)  chicago screws or brads through the flaps?

4) does the seat go inside the bag or outside (I'd guess outside)?

5) why is one welt longer than the other?

6) finally, why the hole in the middle of the seat?  I can't see where the saddle anything protruding through this.  So is this hole there just to help the seat lay flat?
