Neat's Foot Finishing Question

I usually finish my holsters, gunbelts, sheaths, etc. by dying, sewing, a coat of two of Neat's Foot Oil and finally a coat or two of Bag Kote or Tan Kote.  I have also usually finish the holster innards by coating with GumTrag and burnishing before sewing.  My daughter and I are working on a gunbelt and holsters for her (buscadero rig, if it matters).  She does not want to dye.  After experimenting with the leftover leather from the project, she has decided she just wants several coats of Neat's Foot, no dye. 

My question:  When one is finishing with Neat's Foot and no dye, should we put on a coat or two before sewing or just wait until everything is assembled?  Anything else we should be considering when plan is to use no dye?  We will be finishing the edges my usual way burnishing, then gumtrag or Edge Kote and burnishing some more, so the question is related to everything other than edge finishing.

I would assemble it first. In fact I seldom do any dying before assembly anymore. I've started putting it all together and dip dye it. Use a piece of antler and a polished up end of a broomstick to burnish the inside of the holsters with gum trag. Also have a couple pieces of flat boards polished up that work well to burnish the inside of knife sheaths. Wrap a stick in a rag if you want to get oil down in the inside of the holster.
