Here are a couple of more recipes for ya':

Amish Peanut Brittle
1 cup brown sugar   
1 cup light molasses
1 cup water
Speck of salt
4 Tbs. butter
2 cups shelled peanuts

Combine sugar, molasses, water, and salt in a heavy saucepan. Cook slowly, stirring occasionally, to soft-crack stage (280°F.). Stir in butter and immediately remove from heat. Stir in peanuts. Pour onto greased marble slab or stoneware platter and let cool. Break in pieces.

English Rum Toffee
1 3/4 cups sugar
1 cup light cream
1/8 tsp. cream of tartar 1/2 cup butter
1 tsp. rum flavoring
4 squares semisweet chocolate
1/2 cup chopped pecans

Combine sugar, cream, and cream of tartar in a heavy saucepan and bring to a boil, stirring constantly. Let boil for three minutes. Add butter. Continue cooking until mixture registers 270°F. on candy thermometer. Remove pan from heat and stir in rum flavoring. Pour into a buttered pan and let cool. Melt chocolate in top of a double-boiler and spread evenly over candy. Sprinkle nuts over chocolate. Let candy harden 2-3 hours. Break in pieces.

Howdy Dutch,

Boy do those sound tasty!  I have to resist getting the ingrediants and making them up.  I really need to drop aobut 15 pounds and candy will be no help at all. ;D
