I never handled a open top and wanted to know.
Are the Colt 44 and 45 cal. conversions 5 or 6 shot?

If you are talking about the factory conversions from Uberti, they are all 6 shot. If you are talking about conversion cylinders you purchase to make a conversion, they are mostly 45Colt/Scholfield and there are two manufacturers. Kirst which are 5 shot and R&D which are 6 shot.

The 1860 Colt conversion cylinders from both Kirst and R&D are 5-shot.  The Remington conversions are 5-shot from Kirst and 6-shot from R&D.  The Uberti factory "conversions" are 6-shot.
