dying a saddle darker

Can a old saddle be stripped of conditioners and oils and dyed a darker color?

In short - yes - but the remains of the old stain lines will still be visible, and I think you're asking because you want to eliminate them.

Better to clean it thoroughly and re-apply 'good' conditioners to enhance its original suppleness and bring out the richness and 'character' of the hull.
